Chettinad Mutton Curry

Ingredients
- Mutton - 1/2 kg
- Turmeric pwd - 1/4 tsp
- Red chilli pwd - 1/2 tsp
- Salt to taste
To prepare masala
- Oil - 1 tsp
- Cumin - 1/2 tsp
- Pepper - 3/4 tsp
- Red chilli - 5 to 6
- Coriander seeds - 2 tsp
- Cinnamon - 2
- Cloves - 4
- Cardamom - 2
- Star anise - 1
- Curry leaves
To make mutton curry
- Oil - 1 tbsp
- Cumin seeds - 1/2 tsp
- Bay leaf - 1
- Onion - 2
- Ginger garlic paste - 1 tbsp
- Tomato - 2
- Saunf pwd - 1/2 tsp
- Curry & coriander leaves
Method
- Wash and chop mutton to bite sized pieces
- Add mutton to mixing bowl, add turmeric pwd, red chilli pwd and salt.
- Combine well and allow to marinate for minimum 20 mins.
- Add marinated mutton to cooker and add 1/2 cup of water.
- Combine and pressure cook for 5 whistles or until tender.
- Set it aside.
To prepare masala
- Heat 1 tsp of oil.
- Add pepper, cumin, coriander, curry leaves, cinnamon, cloves, star anise, cardamom and red chilli.
- Saute for few minutes.
- Turn off flame.
- Add to blender.
- Add 1/4 cup of water and grind to smooth paste.
- Set it aside.
To make mutton curry
- Heat 1 tbsp of oil in frypan.
- Add cumin seeds and wait to splutter.
- Add sliced onions and saute until light brown.
- Add ginger garlic paste and toss.
- Add sliced tomato and cook until soft.
- Add masala paste and combine.
- Cover and cook for few minutes.
- Add the water (that is along with cooked mutton) and cook.
- Cook in high flame until masala thickens.
- Add cooked mutton and cook for few more mins.
- Add saunf pwd and taste & adjust salt and seasonings.
- Turn off flame.
- Sprinkle freshly chopped curry & coriander leaves.
- Lipsmacking flavorful delicious mutton curry is ready.
- It pairs up excellent with roti, chapathi, puri & rice dishes.
