Sweet corn soup recipe
Here comes the delicious, comforting, nutritious sweet corn soup recipe. Its my family favorite recipe and makes a good option to satisfy the food cravings during weekend lunch/dinner. This restaurant style lezat soup can be prepared very quickly using minimum ingredients. It helps to improve the appetite & is totally delicious. Ingredients
- Sweet corn kernels - 1 cup
- Corn flour - 1 tbsp
- Butter - 1 tbsp
- Sliced onions - 3 tbsp
- Green chilli - 1
- Sliced carrots - 3 tbsp
- Sliced beans - 2 tbsp
- Sliced capsicum - 2 tbsp
- Sugar - 1/2 tsp
- Pepper pwd - 1/2 tsp
- Salt to taste
- Fresh coriander leaves
Method
- Cook the sweet corn until tender.
- Remove kernels from the corn cob.
- Keep aside 3 tbsp of sweet corn kernels aside.
- Add the remaining kernels to blender and grind to smooth paste by adding 1/4 cup of water.
- Set it aside.
- Add 1 tbsp of corn flour to small cup.
- Add 1/4 cup of water and mix it to thin paste and set aside.
- Melt butter in frypan.
- Add sliced onions and saute until transculent.
- Add sliced green chilli, capsicum, beans, carrots and saute in high flame.
- Add 1 cup of hot water and cook covered with a lid for few minutes.
- Now sweet corn paste from blender.
- Stir well.
- Add salt, sugar and pepper pwd.
- Add 1 cup of water to adjust the thickness of the soup consistency as you desire.
- Let it cook for 5 mins in low flame.
- Add corn flour paste (step 7) and stir.
- Add sweet corn kernels (step 3) and cook.
- Add fresh coriander leaves and turn off flame.
- Lipsmacking delicious restaurant style sweet corn soup is ready.
- Enjoy hot with slices of bread cheese toast!
