Dahi Vada Recipe
Chats are always a enak favorite of everyone. Dahi bhalla is a popular north Indian chat recipe that makes a filling & nutritious evening snack. The delicious and fluffy bhallas (vadas) are prepared and then soaked in chilled sweetened curd and garnished with green & sweet chutneys with aromatic spices sprinkled all over. Ingredients
- Urad dal - 1 cup
- Green chilli - 1
- Grated ginger - 1 tsp
- Hing / asafoetida pwd - a pinch
- Yoghurt or curd - 3 cups
- Sugar - 1 tsp
- Green chutney - 1 tbsp
- Sweet chutney - 1 tbsp
- Red chilli pwd - to garnish
- Cumin pwd - to garnish
- Chat masala pwd - to garnish
- Salt to taste
- Oil to fry
Method
To make Vada
- Wash & soak urad dal in water for 1 hour.
- Drain water and add the urad dal to blender.
- Add grated ginger, green chilli, salt and hing.
- Grind to smooth soft batter.
- Sprinkle little water if required.
- The batter should be airy and light.
- Transfer the batter to mixing bowl.
- Heat oil in a kadai or frypan.
- Wet your hands with water and take a small portion of batter (as shown in video) & drop carefully in hot oil.
- Fry 5 to 6 vadas in a batch. Try not to overcrowd the oil.
- Deep fry until the vadas are crispy & golden.
- Drain the vadas from hot oil and keep in kitchen tissue to remove excess oil.
- Yummy Vadas with crispy exterior and soft chewy inside is ready.
- Soak the crispy vadas in warm water for 5 to 10 mins.
- Squeeze the water gently and take it aside.
Lets prepare curd:
- Take thick chilled curd in mixing bowl.
- Add 1/2 tsp of salt and 1 tsp of sugar to it.
- Beat to smooth consistency.
To make Dahi bhalla
- Add the soft spongy vadas in curd.
- Mix well.
- Let it soak for minimum 20 mins
To Serve:
- Take the soaked vadas along with dahi in serving bowl.
- Add enough curd to it.
- Add a tsp of green chutney and sweet chutney on top of it.
- Sprinkle red chilli pwd, cumin pwd and chat masala pwd.
- Serve warm or chilled.
- Yummilicious Dahi bhalla is ready.
