Onion Uthappam
Spicy delicious Onion Uthappam is one of the very famous South Indian breakfast recipe. It tastes divine with a tempting aroma of onions & veggies over a thick pan cake prepared with fermented rice lentil batter. Ingredients
To prepare dosa batter:
- Par boiled rice or idli rice - 3 cups
- Urad dal - 1 cup
- Fenugreek seeds - 1 tsp
- Salt to taste
To make Uthappam:
- Dosa batter - 1 cup
- Sliced onion - 4 to 5 tbsp
- Green chilli - 1
- Grated carrot - 2 tbsp
- Coriander leaves chopped - 1 tbsp
- Chopped cashewnuts - 1 tbsp
- Chopped tomato - 2 tbsp
- Sambar pwd or red chilli pwd - 1/2 tsp (click here to view how to make sambar pwd at home)
- Cumin pwd - 1/2 tsp
- Salt to taste
- Oil to drizzle
Method
To prepare Dosa Batter ( Click here to view the stepwise recipe to make dosa batter)
- Wash & soak 3 cups of idli rice (parboiled rice) in water.
- Soak urad dal and fenugreek seeds in water for 6 hours.
- Grind it to smooth paste and add salt.
- Mix well with hands.
- Let the batter ferment for minimum 10 hours.
- Mix well. Dosa batter is ready!
To prepare Uthappam
- Heat a griddle.
- Grease with oil.
- Pour 2 ladle full of dosa batter and spread to thick round shape as shown in video.
- Drizzle gingely oil to sides.
- Sprinkle finely chopped onion.
- Sprinkle sliced green chilli, coriander leaves, grated carrot, chopped cashewnuts, tomato.
- Sprinkle salt, cumin pwd and sambar pwd. ( sambar pwd gives good aroma & flavor to uthappam)
- Drizzle oil on top.
- Cook it on low flame for 3 mins.
- Flip it to other side and cook for a minute.
- Remove from griddle.
- Delicious and spicy south Indian style Onion uthappam is ready.
- It pairs up excellent with sambar & chutney.
- Enjoy hot!
