Ingredients Cooking Time: 20 mins Tomato - 4 or 5 Onion - 1 Butter - 1 tbsp Cinnamon - 1 small piece Bay leaf - 1 Cloves - 2 Grated ginger - 1 tsp Grated garlic - 1 tsp Carrots & beetroot sliced - 1/2 cup Mint & coriander leaves - a few Sugar - 1/2 tsp Pepper pwd - 1/2 tsp Corn flour - 1 tbsp Salt to taste Method Melt butter in a pressure pan. Add cinnamon, bay leaf and cloves Saute until it crackles. Add grated garlic, ginger and saute. Add sliced onion and salt. Saute for a minute. Add sliced carrots, beetroots and toss in high flame. Add sliced tomato and cook for 2 minutes. Add mint leaf and coriander leaves. Add 1/2 cup of water and stir. Cover and pressure cook for 2 to 3 whistles. Once the pressure goes off, mash the contents. Allow to cool. Transfer to blender and grind to smooth paste. Filter the tomato paste and add it to pan. Heat the tomato puree in medium flame. Add 1/4 cup of water and adjust the consistency of the soup. Add salt, sugar and pepper pwd. To 1 tbsp of corn flour add water and mix to smooth thin paste. Add this corn flour paste to soup and stir. Let the soup boil for 5 mins in low flame. Turn off flame. Restaurant style creamy delicious tomato soup is ready.
